Energy Balls of YUM

It’s 3pm, you’re feeling the afternoon slump kick in and all you want to do is take a quick power nap but there’s no sign of taking a snooze in sight. How about you try another route – power balls! No, not the lottery kind. The kind that gives you a little energy boost without the crash that comes with sugary treats. These energy balls are so simple to make, require no baking whatsoever, and can be tailored to your taste buds by adding some oats, chocolate morsels, and even extra honey for ooey gooey deliciousness.

 

 Start by grabbing a bowl and a mixing spoon. Then grab your ingredients and start mixing however much of each you want into your bowl. The larger the portions, the larger the batch will be! If you make it too thick or chunky to start, you can always add more honey or peanut butter to thin it a bit.

 

  • Creamy Peanut Butter: This is the key ingredient because it’s your binder- it keeps everything stuck together. Also, if you prefer not to use peanut butter, any nut butter will do!
  • Semi-Sweet Chocolate Chips: Mini sizes are the best! Or, if you prefer to keep this chocolate free, add crushed nuts instead.
  • Old Fashioned Oats: Rolled or old-fashioned oats are best as instant oats somewhat disintegrate and you want some of the texture from the solid oats in every bite. Or,  if you prefer no oats, or need gluten free energy bites, go oat free! These energy balls are just as good without the oat flavor.
  • Honey: This is your sweetener- all natural! Adding the right amount gives you the perfect amount of sweetness and stickiness. You can use agave if you prefer.

Optional ingredients:

  • Ground Flax Seed: Adds a boost of nutrients and some fiber and a nice added touch.  
  • Chopped Fresh Dates: Mixed in or as your standout single ingredient to the above mixture, you can chop of fresh dates to add sweetness and flavor.
  • Craisins: Especially if you go more down the oat ball path, adding dried cranberries will surely sweeten up your recipe.

 

Once you have your ingredients of choice thoroughly mixed in a bowl, place the bowl in fridge for 20-30 minutes to harden the “dough”. Once your mixture’s consistency is firm, you can start rolling away! Grab a small scoop and roll between flat palms like you’re making meatballs. Then, place each completed ball on parchment paper and put back in the fridge to keep its shape and freshness. Oh, and don’t forget to eat one, or five! These are great for breakfast, snacks, and evening an after-dinner dessert. Enjoy!
